This is from the Frugal Gourmet cookbook. I've always counted on this recipe for a simple, yet fantastic, side pasta dish.

SERVES 4 (change servings and units)

Ingredients

Directions

    Thinly slice the garlic and saute in the olive oil until not quite browned.
  2. 2
    Add the cream, tiny bit of salt, and ample pepper.
  3. 3
    Simmer for a moment to reduce the cream.
  4. 4
    Toss the cream with the hot pasta, just removed from the water.
  5. 5
    Add lots of cheese and a parsley garnish.

This is similar to a traditional Fettucine Alfredo, as it has a fairly heavy, rich sauce. I prefer my sauce a bit lighter and creamier so I added some non-fat milk to juice it up. I was surprised how mild the garlic was and my DH couldn't even tell he was eating garlic slices in the sauce. I added lots of pepper to add some zing, and I used fresh Parmigiano-Reggiano cheese which is delicious! Thank you Mersaydees for sharing your recipe. Reviewed by a Chic Chef for ZWT4

    This was really really good! I made this for a quickie dinner for just myself. It hit the spot! I used a tablespoon of jarred minced garlic to save on time and more like a cup of cream. After the cream mixture simmered a bit, I mixed the parmesan cheese into the the sauce to thicken it and then mixed the noodles in. I also added a sprinkle of red pepper flakes into the sauce for a some bite. This was great! I know my kids would love this as well! Thanks for sharing!

    OMG this is so yummy!!! It truly is not too garlicky, at least for family!!! It was totally devoured by my kids!! We will definitely make this again!!! Thanks mersaydees for posting this recipe!!!! Made for ZWT4.
