Cheese & Pepperoni Popovers

These cheesy, herb popovers make a lovely light lunch when served with a nice simple green salad and some fresh fruit slices.

SERVES 4 , 8 poppovers (change servings and units)

Ingredients

Directions

    Spray the bottoms and sides of eight muffin pans for Yorkshire pudding and set aside .
  2. 2
    Preheat oven to 400°F.
  3. 3
    In a bowl with a wire whisk, mix the eggs, milk and oil together.
  4. 4
    Then add the flour, basil, oregano, parsley and garlic powder, mix until well blended.
  5. 5
    Stir in the pepperoni.
  6. 6
    Fill the prepared pan, half full of batter.
  7. 7
    Bake in a 400°F oven for 20 minutes. Remove from oven and sprinkle the cheese onto of the popovers and return to the oven for 5 more minutes.

    Remove from pan and serve immediately.

    I have added more pepperoni on Nimz's suggestion. It tastes even better.

I'm not big on making popovers, but these turned out great, AND I'm keeping the recipe handy! These little buggers are very tasty, & they're easy to make, too! Really enjoyed the combo of cheeses here! Thanks for posting a great recipe! [Made & reviewed as a kidnapped recipe in the Aus/NZ Special Recipe Swap #19]

    These were really nice for lunch today. They were fairly easy to put together too. I could not find edam cheese so left it out but other than that made as written. I'll probably add more pepperoni next time. Thanks BK for sharing.
