One-Pan Potatoes and Pepper Steak

I found this recipe a long time ago in a magazine in a laundry mat and tore it out. The page is so old and creased and faded that I can't hardly read it anymore. It is a delicious and easy one pan meal for a fast dinner.

SERVES 4 (change servings and units)

Ingredients

Directions

    Partially cook potatoes in water, or microwave them.
  2. 2
    While potatoes are cooking, mix together the garlic powder and pepper.
  3. 3
    Toss beef with the garlic mixture.
  4. 4
    Heat oil in a large skillet over high heat.
  5. 5
    Add beef and stir fry for 3 minutes.
  6. 6
    Remove beef and add bell pepper to the pan.
  7. 7
    Stir fry for 3 minutes.
  8. 8
    Add partially cooked potatoes and saute 5 minutes.
  9. 9
    Add beef and fry until heated through and meat is at desired doneness.
  10. 10
    Season with salt.

Great recipe. Basic, easy to make and tasty. I made it exactly as it is presented except, being a vegetarian, I substituted Morningstar Vegetarian Beef Strips for the meat.

    This recipe was really good but not as easy as we thought. There was a lot of removing things and adding things back and forth from the pan. Overall though GREAT flavor! The meat turned out really tender. We didn't change anything about the recipe. Thanks!

    I love steak and potatoes. Have had this little gem in my coobook for ages and finally got around to making it. It was easily put together, not too much of a mess and delicious as well. Thanks for a great recipe!
