A recipe from Splenda. I wrote 9-12 muffins. Cause you'll have 12 small muffins or 9 larger muffins.

9 -12 muffins (change servings and units)

    Place oven rack in top 1/3 of oven.

    Preheat oven to 375°F Line 12 muffin cups with paper liners. Lightly spray liners with non-stick cooking spray.

    Sift together flour, baking powder and salt, set aside.
  4. 4
    Beat margarine at medium speed with an electric mixer until creamy. Gradually add Splenda and honey, beating until light and fluffy. Add eggs one at a time beating until blended after each addition. Stir in vanilla. Alternately add flour mixture and milk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Fold in berries.

    Spoon batter evenly into paper lined muffin cups. Bake 20 to 22 minutes or until golden. Remove from pan immediately, and cool on wire rack.

this was very easy to prepare and yielded 12 muffins. i like the fact that they are sugar free and they taste great.

    I made this recipe for the first time this morning and I can promise you now that I will be making these again whenever I need my blueberry muffin fix! I got 12 nice sized muffins out of this. I was initially concerned because the batter was soooo thick, but they turned out to be moist and so floverful! They are slightly labor-intensive (what with the use of a mixer) but so worth it!

    We love blue berry muffins, but I hardly ever make them from scratch. Thanks for posting this wondeful, lower calorie muffin. It's very yummy and even the picky eaters in the family are eating them!
