Title Town Casserole

Ingredients

• 1 cup Bisquick Heart Smart mix
• 1/2 cup Egg Beaters egg substitute
• 2 large eggs
• 1/4 cup onion
• 1/2 cup broccoli
• 1/2 teaspoon salt
• 2 cups zucchini
• 1 cup summer squash
• 1/4 cup mozzarella cheese
• 1/4 cup cheddar cheese
• 1/3 cup canola oil

   Preheat Oven to 350.

   Mix all vegetable ingredients together in a bowl. Season with garlic and any other spices to taste. Mix all remaining ingredients in a medium to large mixing bowl, beat well. Add vegetables to "batter" mixture, mixing to make sure veggies get coated. Pour into a greased 9X13 pan, and bake for 30 to 40 minutes depending on texture desired. I prefer to use quality fresh grated Wisconsin cheeses as a final topping to make this really authentic -- But Kraft cheeses will do :) Enjoy!
