Absolute Best Ever Lasagna

Out of all the things that I cook, this is what I am known for. My DH loves to say he married me for my lasagna.

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1/2 lb Italian sausage
  • large onion, chopped
  • 2 garlic clove, minced
  • teaspoon salt (or to taste)
  • tablespoon dried parsley flakes
  • tablespoon dried oregano
  • tablespoon dried basil
  • 2 (14 1/2 ounce) cans whole tomatoes, undrained and chopped
  • 2 (6 ounce) cans tomato paste
  • 24 ounces cottage cheese
  • 2 egg, beaten
  • 1/2 teaspoon pepper
  • tablespoons parsley
  • 1/2 cup grated parmesan cheese
  • lb mozzarella cheese, divided
  • 12-15 lasagna noodle
  • Directions

      Brown ground beef, Italian sausage, onion and garlic.

      Add salt and next 5 ingredients; stirring until well mixed.

      Simmer 1 hour.

      Cook lasagna noodles according to package directions; drain and set aside.

      Combine cottage cheese, eggs, pepper, 2 tablespoons parsley, Parmesan cheese and 1/2 of mozzarella cheese; In a lasagna pan, layer noodles, meat sauce, and cheese mixture; repeat.

      Top off with layer of noodles; sprinkle evenly with remaining mozzarella cheese.

      Bake at 375 degrees for 30 to 40 minutes, or until cheese mixture is thoroughly melted.

    I made two huge pans of this for our Neighborhood Center's Mother's Day celebration and while I didn't actually attend the event, my executive director told me it was "exceptional" and the best lasagna he had ever had. The residents from the neighborhood mowed down on it and there's hardly any left.

    So, I am beginning to notice that almost all of my favorite recipes on this website have "ratherbeswimmin" as the author. At first, it was honestly a coincidence (as in this case) but now I actually seek them out. You really have a knack for this! As far as the recipe, this is BY FAR the best lasagna I've ever had. It's a perfect blend of gooey cheese and a flavorful, thick meat sauce. It holds up beautifully after cutting and it tastes awesome. I didn't have time to let mine simmer for the entire hour and it was still great. I can't imagine how good it will be when I make it correctly. Thanks for the recipe!!!

    I added a 16 oz. package of frozen spinach (thawed) to the cheese mixture (trying to sneak in vegies where I can). My family loved it. Will definitely make it again.

    WOW!!! This was absolutely the BEST!!! I made this tonight for dinner and it was delicious. My DH had 2 BIG helpings and he LOVED it!! Definately something I will make again and again. I followed the recipie exactly and added just a bit of sugar to the sauce. I always do to tomato sauces. BRAVO.
