Salmon With Penne Pasta Alfredo

This recipe was inspired after I ordered the delicious Salmon at Hard Rock Cafe. I was so impressed that I created a recipe of my own!

SERVES 4 (change servings and units)

Ingredients

Garlic Butter

Penne Alfredo

Additional ingredients

Directions

    Garlic Butter (steps 1 - 6):.
  2. 2
    Completely soften 1/2 cup of butter (1 stick).
  3. 3
    Melt butter and olive oil in a small saucepan.
  4. 4
    Sauté minced garlic approximately three minutes until just cooked.
  5. 5
    Combine garlic/butter mixture with the rest of the garlic butter ingredients.
  6. 6
    Refrigerate while salmon in prepared, so that butter is somewhat soft but still holds its shape.

    Fettuccine Sauce: (steps 7 - 10):.

    Melt butter in saucepan and add cream and egg yolk, well beaten.
  9. 9
    Heat, stirring until well thickened.
  10. 10
    Add Parmesan cheese, parsley, salt, and pepper.

    Main recipe: (steps 11 - 19):.

    Preheat oven to 350 degrees F.

    Bake salmon until done (allow approx 20 minutes). Alternatively, salmon may be grilled if you prefer.

    Boil penne pasta per package instructions or to desired doneness.
  15. 15
    Add washed spinach to the pasta during the last minute of cooking.

    Pour Alfredo sauce over drained pasta and spinach, toss to coat.

    Top pasta with diced tomatoes.
  18. 18
    Top each serving with a salmon fillet.
  19. 19
    Top each salmon fillet with a dollop of garlic butter.

I went ahead and tried this recipe anyways because I was making salmon for dinner and trying to hide it in some pasta because my husband does not like seafood. I made the garlic butter sauce, then added a little milk to make it more creamy. Then I added pieces of cooked squash and zuccini to add some veggies to it, and it was delicious. I topped it off with 1/2 cup or so of shredded asiago cheese. Parmesean would be great too. This was so good. I loved it. You could substitute the salmon for chicken if you want to and it would be equally as good.
