Lentil & Chicken Tagine

This recipe is good even without the chicken. I use my pressure cooker to cut down on the cook time. If you are using a regular pot the time should be doubled.

SERVES 3 -4 (change servings and units)

    Place all the ingredients into the pressure cooker or regular pot.
  2. 2
    Cook for 8 minutes after the pressure cooker begins to hiss. Release the pressure, open the lid & stir. Add more water if needed then cover. Cook for an additional 5 minutes.

    Note: When using a regular pot the cook time should be around 25 minutes.

    In Morocco, this tagine is served with thick bread to scoop up the lentils & chicken.

This smelled amazing while cooking! And tasted just as amazing. The spices are perfect and so rich. It was just as good the next day as well. I'd think this would be easy to make in bulk and keep in the freezer.

    Fantastic! Everyone in my family loved this, and the sometimes-picky 3 yr old ate his whole serving. I cubed the chicken into large bite-size chunks, and added them towards the end so they wouldn't get overcooked. I cooked mine on the stovetop, and it took just over half an hour. We scooped it up with Whole Wheat Flatbread and practically licked our plates clean. Made for NAME tag. Thanks, Nasseh!
