South Beach Diet Grilled Salmon With Artichoke Salsa

This is a Phase 1 dish.

    Preheat grill to medium heat. Mix dressing and lemon juice. Pour half of the dressing mixture over salmon in large resealable plastic bag. Seal bag; refrigerate while preparing the salsa.

    Combine remaining dressing mixture, parsley, tomatoes, artichokes, cheese, and olives. Let stand at room temperature until ready to serve.

    Remove salmon from the dressing mixture; discard bag and dressing mixture. Grill salmon 5 minutes on each side or until salmon flakes easily with fork. Serve with the salsa.

This was very easy and delicious! I tripled the salsa recipe because our family likes a lot on top of the fish.

    PAC Spring 2008. Fabulous!!!! This was such an easy dish to prepare and the taste is superb. This would be lovely to serve to guests. I used one large filet (for 2 people) and kept the ingredient amount for the topping (since I love artichokes, black olives and tomatoes... never can have enough of a good thing!). I used an indoor grill pan, wiping it with olive oil before heating it up to medium heat. Great recipe here...try it!
