Have been saving this recipe for over 40 years, expecting to make it someday, & that someday happened this past week! Well, what the heck — Better late then never for this nice-tasting, easy-to-make dessert! [The recipe takes a 6 ounce can of frozen orange juice concentrate.]

SERVES 6 , 18 pancakes (change servings and units)

FOR THE PANCAKES

FOR THE SAUCE

Directions

    FOR THE PANCAKES, Combine egg, cream & 1/4 cup orange juice concentrate.

    Add pancake mix, stirring to remove most lumps.
  3. 3
    Bake on hot greased griddle.

    FOR THE SAUCE, in a saucepan, mix butter, sugar, 1/2 cup orange juice concentrate & zest.

    Heat to boiling, stirring occasionally.

I did only the pancakes. DH ate them with maple syrup. I ate them alone like that. I liked the taste as is. I used 1/2 cup of half and half cream and 1/2 cup of whole milk. It was fine. I don't understand how we can have 18 pancakes with this recipe cause I got only 6 LOL Thanks Syd. Made for 123 hit wonders.

    These are great Syd. I must confess I had them for lunch and not dessert. I enjoyed these tasty pancakes very much and will make again. They were light, fluffy and tender with a subtle orange flavour. The sauce is lovely, sweet and semi tart from the zest.

    Absolutely fabulous Syd.........wow, these were just great! I am VERY sorry that I did not have all the ingredients to hand; well one ingredient - NO frozen orange concentrate, so I used normal juice instead. My topping was made with ORANGE BLOSSOM honey instead of the sugar, and although it was thinner than Baby Kato's photo, the taste was DIVINE! I added the zest and some more juice to it. These pancakes came out fluffy and light with a REAL citrus zing! Made for Aussie/NZ Recipe Swap #16 and already requested again! THANKS! FT
