Sablés Normandes à La Cannelle

Sablés are sometimes called French butter cookies. The name 'Sablé' is French for "sand", which refers to the sandy texture of this delicate and crumbly shortbread-like cookie. The cookie originated in Normandy hence the 'normandes'. 'À la cannelle' means literally "has cinnamon". So these are Cinnamon Cookies, and they are delicious! Notes: Hard-boiled eggs-Contrary to popular belief eggs should never be boiled they should instead be "simmered" for 12-15 minutes depending on the size of the egg Mixing-I highly suggest mixing using your hands, this will melt the butter and allow the mix to become dough Buttered Baking Sheet: Yes, you need to use real butter NOT cooking spray Rolling: I have gotten away with rolling individual balls and flattening them with a cup bottom but if you have time I suggest rolling them out These are some of my favorite cookies and they tend to disappear fast so I always make double. Plus these cookies can be made into any shape so they are great for holidays!

Ingredients

  • 2 hard-boiled egg yolks
  • cup flour
  • tablespoons very soft butter
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • Directions

      Mash egg yolks in separate bowl.

      Mix together dry ingredients.

      Cut in butter.
    4. 4
      Add egg yolks to other ingredients.
    5. 5
      Knead dough until smooth.

      Shape into a flattened ball and wrap and refrigerate for 1 hour.

      Preheat oven to 375°.

      Roll out dough to 1/4" thickness.

      Dip rim of cookie cutter(circular, 2" diameter recommended) in flour.

      Cut out cookies and arrange on buttered baking sheet.

      Bake 10 to 12 minutes or until lightly brown.

      Remove immediately from baking sheet and let cool on wire racks.
