Let me tell you this kicks butt!!! My girlfriend's momma makes this and it is to die for!!!

SERVES 4 -6 (change servings and units)

Ingredients

    Boil your potatoes about 40 min until done., drain. Peel the skins off and slice or chop the potatoes up (preferred method still while the potatoes are warm)and place in a large mixing bowl. Pour the cider vinegar over the potatoes and stir once- Let them sit for 1 hour to soak up good.

    Slice up red onion and add them to potatoes as well as the olive oil. Add Dill and pepper and salt and garlic powder. Mix well and serve.

    Serve room temperature.

Very good: next time I'll reduce the cider vinegar a bit and add some cooked crumbled bacon. Made for PAC Spring 08.

    I really liked this, but I love vinegar. Thought I could stay away from it, but it kept calling my name! I prefer potato salad without eggs & mayo. Thanks for the recipe!
