Lentils and Rice Casserole

This recipe got its start from ladypit's Brown Rice and Lentil Casserole #74629. After weeks of tinkering, I adapted it so much that it really became something totally different. LOL My family, especially my 13 month old, really love this! Wholesome, filling and super easy to throw together! I make this all the time. The leftovers are great, too.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Preheat oven to 375 degrees.
  2. 2
    Mix all ingredients, except the cheese, in a large casserole dish.
  3. 3
    Cover and bake for 40 minutes.
  4. 4
    Stir and top with the cheese.
  5. 5
    Bake uncovered for 10 minutes more.
  6. 6
    Yum!

I thought this was pretty good for rice and beans. It was the first time I ever made rice and beans so I can't really compare it to anything else.

    This was the first time I've ever tried lentils and am hooked now. This recipe was very easy and family friendly. Next time I'll let it cool a spell before I dig in though... as it cools it blends even better. Thanks for a great greeting to lentils
