I can't for the life of me remember where this recipe came from but I have been making these for about 30 years now. Everyone absolutely loves them. I nearly always double or triple the recipe because we love them as snacks or in our lunch the next day. Go by the recipe and don't add any extra salt as there is enough in the cheese and crackers. Enjoy!

Directions

    Put all ingredients (except oil) into a large bowl and mix well.

    Spoon mixture into hot oil and flatten slightly to make patties. Fry until cooked through and golden brown on both sides. Drain extra oil off on paper towels and enjoy!

Made this with frozen zucchini, drained and patted dry, and this was very nice. I did like the addition of the parmesan cheese. Thanks for sharing! Made for Fall PAC 08

    My husband hates zucchini. No, really. Then why'd he have FOUR of these? lol These are seriously tasty and obviously going to be made a lot around here. I didn't have garlic salt, so I used garlic powder and added about 1/2 tsp of salt. PERFECT. Thank you for posting! Made for PAC Fall 2008.

    These are sort of like hashed browns and German potato pancakes---without the potato! Nice flavor, I added a half of a large, fresh onion (grated). I agree with the other reviewer....make plenty! Made for PAC Spring 2008

    These are easy to put together and cooked up nice and crisp. I cooked them on a preheated cast iron griddle with only a minimal amount of olive oil. Made for PAC Spring 2008
