Real Alfredo Sauce

Don't know where I originally got this, but this is the best alfredo sauce I have ever had outside of a restaurant. I have made it with or without the cream cheese, and with all Parmesan, and it still turns out great. The nutmeg is essential!

Ingredients

  • tablespoons butter, unsalted
  • cups heavy whipping cream
  • tablespoons cream cheese, room temperature (NOT low fat!)
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup romano cheese, grated
  • 1 garlic clove, grated (optional) or 1/4 teaspoon garlic powder (optional)
  • salt
  • 2 egg yolk
  • 1/4 cup parmesan cheese (for garnish)
  • parsley sprig (for garnish)
  • Directions

    1. 1
      Melt butter in a saucepan over medium heat.
    2. 2
      Add cream and cream cheese, stirring constantly, until slightly thickened.
    3. 3
      Stir in nutmeg, parmesan, romano cheese, and garlic.
    4. 4
      Stir constantly until melted completely.
    5. 5
      Salt to taste.

      Mix in egg yolks.
    7. 7
      Continue to simmer over medium low heat, stirring constantly, for 3 to 5 minutes.

      Serve over pasta, garnished with additional grated cheese and parsley.

    I used this to make 2bleu's White Lasagne yum yum yum!! My 2yr kept dipping his chip in the sauce, by the time I was done he had it all down the front of him and kept say mmm good! LOL Very creamy, very rich and oooh so good!

    I absolutely loved this sauce. I've tried many alfredo sauces, but this one was exactly what I was looking for.. definitely what I'll be using from now on since DH loves anything made with alfredo sauce. Thanks for posting!

    This is a great recipe! So smooth and creamy. I have a recipe for alfredo sauce, but this is the best I've ever had. Thanks for sharing Gator. I will post pics soon.

    Rich, creamy, smooth and delicious! This recipe is exactly what you want in an alfredo sauce. Alfredo sauce is one of my favorite things to order and to make and this one is now my all-time favorite. It is restaurant quality! I made it exactly as written because there is no need to change a thing. I served it over fettuccine, but it would be wonderful with absolutely any kind of pasta or pasta dish. I can't wait to try it in white lasagna! Thanks for sharing!
