I'm always looking for healthy snacks to satify my sweet tooth, so this is my newest concoction.

SERVES 2 (change servings and units)

Ingredients

    Preheat oven to 350.
  2. 2
    Cut the top and bottom off of apples and core - pour lemon juice over apples.
  3. 3
    In a bowl mix oatmeal, egg white, cinnamon and honey.
  4. 4
    Place the stuffed apples on a baking sheet and cover with foil.
  5. 5
    Bake for about 40 mins until tender.
  6. 6
    Remove from the oven and top with vanilla yogurt.

I made these for spring PAC and never got a chance to taste them, because my brother ate them. He said thet they we a 5 star recipe.

    Apples are a great favorite of mine, & I used Granny Smiths in this recipe along with a citrus honey from Trader Joes! After coring the apples I hollowed them out a little more, then, after I doubled the filling ingredients, I filled the apples & mounded it up on top! GREAT, GREAT TASTING, especially with the yogurt! [Made & reviewed for one of my adopted chefs in this Spring's PAC]
