Found this in a potato cookbook picked up in a thrift shop. A nice simple side to make using fresh herbs & tomatoes.

SERVES 2 (change servings and units)

Ingredients

Directions

    Cook potatoes in boiling water until tender & drain well, set aside.
  2. 2
    Melt butter in same pan, add tomatoes, herbs, pepper & wine if using, saute for 1 minute.

    Return potatoes to pan, toss gently until heated through.

This recipe made it into our 2Bleu's Best of 2008 Reviewed Recipes Cookbook. 2/26/08 - I have always said if there were ever a mater/tater recipe, I'de grab it up just for the name. I am so glad I found this one. WOW! I used small red potatoes and nuked em for better flavor than boiling and it also cut down the total time to about 7 minutes. Then cut them into smaller bite sized pieces and continued with the recipe as stated (including the splash of wine, yummy!) This recipe is fast, easy, and simple! I used the spices that you stated during cooking and added nothing more, but I did add some salt after plating them up. When I tasted a potato, I thought, "Ok, a nice seasoned fried potato." Then I had a mater/tater combo on my fork, and I placed it in my mouth. I started chewing when all of a sudden, I got this delightful little zap of flavor in my mouth that made my eyelids close and my heart go MMMMMMMM!!!!
