This is such an amazing omelette - i never thought i'd like blue cheese, eggs and apple but I tried it for breakfast today and now I want to have it every day.

Very good! I doubled all but the bleu cheese and used a sprinkling of dried chives because I didn't have any fresh. DH wants some toasted walnuts in it next time and is talking about making the omelet in the microwave. It was a very nice Sunday morning breakfast with some toasted english muffins
