Low-Fat Loaded Baked Potato Soup

A version of Baked Potato Soup to cut out some of the fat and calories. Comfort food and crock pot easy!

SERVES 6 (change servings and units)

Ingredients

Directions

  1. 1
    Combine first six ingredients in a slow cooker.
  2. 2
    Cover and cook on HIGH for 4 hours or LOW for 8 hours,until potatoes are tender.
  3. 3
    Remove 1 cup of mixture and mash potatoes; return to cooker.
  4. 4
    Add Half and Half, cheese, and chives; mix well.
  5. 5
    Heat thoroughly.
  6. 6
    To serve: Top with dollop of sour cream, sprinkles of cooked bacon and more cheese, if desired.

Fabulous, full-flavored soup! No one here knew it was low-fat because it was certainly high taste! I wanted this for lunch, so I slow simmered it on the stovetop. It was perfect. Another keeper, Caroline! MERP'd for All New Zaar Cookbook Tag.

    DD liked this, DH said it was ok, but I didn't care for it. However, that being said, I didn't follow directions to a "T" I parboiled the potatoes and sauted the onion before adding so it wouldn't have to cook as long. I also used a very good vegetable broth that I had on hand. I may try this again sometime and follow the recipe to the letter. If it makes a big difference I'll change my review.

    So tasty, and VERY easy and economical. I omitted the margerine as I used homemade chicken stock which had a layer of fat on the top. For me this made 4 servings as a complete supper served with some crusty, garlic rolls.

    A VERY TASTY SOUP, easy to prepare & easy to forget in the crock pot! Did cut the salt back to 1/4 teaspoon but otherwise followed the ingredients & directions! A friend of mine, watching his cholesterol, was most appreciative of this! Many thanks for posting! [Made & reviewed for one of my adoptees in this Spring's Pick-A-Chef]
