Mandarin Orange Grilling Sauce

A clipped out recipe that went with a grilled chicken dinner. I find this side sauce very refreshing in the summer.

SERVES 4 (change servings and units)

Ingredients

Directions

    In a saucepan, combine cornstarch, brown sugar, ginger, cinnamon and orange peel.
  2. 2
    Stir in the orange and lemon juices and bring to a boil; stirring constantly.
  3. 3
    Boil for 1 minute and then remove from heat.
  4. 4
    Stir in orange segments.
  5. 5
    Cover and keep warm until ready to serve with main dish.

    MICROWAVE DIRECTIONS:.
  7. 7
    In a 4-cup measure, combine cornstarch, brown sugar, ginger, cinnamon and orange peel.

    Gradually stir in orange and lemon juices.
  9. 9
    Microwave on HIGH for 3-4 minutes or until mixture boils, stirring each minute.

    Keep microwaving to boil it one full minute.
  11. 11
    Stir in orange segments.
  12. 12
    Cover and keep warm until ready to serve with main dish.

    GRILLED CHICKEN DISH:(just in case).

    Pound 4 boneless chicken breasts to a 1/4 inch thickness.

    In a small dish combine 2 tbls. melted butter with 1/4 tsp cinnamon and use this to baste the chicken while grilling.

This sauce is wonderful! If you like oranges you will love this! Took no time at all to make in a small saucepan on the stove. I used a 15 ounce can of mandarin oranges and that worked fine. The aroma and flavor of the sauce is amazing! Light and fresh pudding texture sauce with great orange flavor. Will refrigerate this overnight and serve with grilled chicken breast.
