Pancakes with Blood Orange Honey Sauce Garnished with Strawberries. Could be served for breakfast or desert. Makes up to 12 pancakes which are 1/4 cups in size each or 4 very large pancakes. Created for RSC #11.

SERVES 4 (change servings and units)

Ingredients

BLOOD ORANGE HONEY SAUCE

PANCAKE

Directions

  1. 1
Blood Orange Honey Sauce: In small saucepan, add honey, blood orange juice and cornflour, whisk well until sauce ingredients are blended.
  2. 2
Put saucepan over a medium heat and bring mixture to a boil, whisking occasionally and cook until sauce starts to boil, then remove from heat.
  3. 3
Whisk in butter until completely dissolved into the sauce. Set aside and allow cooling until pancakes are ready.
  4. 4
Pancake: In a large bowl, add sifted flour, baking powder, salt and sugar, mix well and make a small well in the centre of the bowl with the dried ingredients.
  5. 5
Add the egg in centre of the well, then add melted butter, slowly add milk and mix until smooth. (You may not need to add the entire 1 1/2 cups of milk, consistence of mixture needs to be smooth).
  6. 6
Using the cooking spray, lightly oil pancake pan or non stick frying pan over medium heat.
  7. 7
Once pan is hot, pour approximately 1/4 cup of pancake mixture onto the pan. Brown on one side of pancake then flip, brown other side of pancake, place cooked pancake onto a warm plate. Repeat this step until all the pancake mixture has completed. Note: Only flip once as pancake will become tough and not light.
  8. 8
To assemble: Equally divided pancakes on four plates. Equally pour blood orange honey sauce on top of the pancakes and then add strawberries on top of the sauce.
  9. 9
    Enjoy.

The pancakes were fluffy and really good, but the sauce is the best part! I might cut back the cornstarch just a little bit in it. I also subbed sugar in the sauce, since I was out of honey, but the amount of sugar was just right for us. I halved the butter in the pancakes, and used smart balance for both. I did not have any problems with the batter. We had 16 ounces of strawberries, so used them all; we enjoyed having enough to put on each pancake. Enjoyable breakfast!

4 Stars - After tasting these pancakes DS said if I do not make my special pancakes then he wants these ones… forever. I prepared both cakes & sauce just as instructed, including the full amount of milk. The batter was wonderfully smooth. The cakes cooked up light & fluffy & the sauce was very easy to make as well. I thought the honey was a little too prominent in the sauce, but that’s just personal preference, everyone else loved it as is. When we make it again I will probably use a little less honey. Made, enjoyed & reviewed for RSC#11, January 2008.

While we didn't try the pancakes because of my wheat allergy, I did make the Blood Orange Honey Sauce. It was pretty good - a nice change from maple syrup.

These were good pancakes. We enjoyed them, they were tender, fluffy, light and tasty. The blood orange sauce was very sweet. I added 3/4 of a cup of milk, as I found the batter thick to work with. Good use of the contest ingredients, good luck.
