This recipe was originally given to be used with Southwest Scramble. This version has been reworked for the "Make It Healthier 2008" forum. It is a topping for Southwestern Scramble on the Lite Side Southwestern Scramble on the Lite Side Delectable! Merry and bright.

1 cup (change servings and units)

    Chop tomatoes, jalapeno, onions and cilantro by hand, into small pieces.

    Mix together in a bowl.

    Add salt and lime juice.

    Mix thoroughly and chill in the refrigerator for about an hour.

    Remix before serving.
