  • ears sweet corn, kernels cut off the cob
  • large ripe heirloom tomato, cored and medium diced
  • ounces fresh torn spinach or baby spinach
  • 2 shallot, minced
  • 12 basil leaves, torn
  • 1/4 cup extra virgin olive oil
  • salt and pepper
  • Directions

      1. Combine all ingredients and let sit for 15 minutes to marry.
