Broiled Flounder With Puffy Cheese Topping

Ingredients

• 1 1/2 lbs flounder fillets
• salt
• pepper
• 1/2 cup mayonnaise
• 1/2 cup cheese, shredded
• 1 egg white
• 1 dash cayenne pepper

Directions

   Place fillets on broiler rack and sprinkle with salt and pepper.

   Broil 4 inches from unit for 10 minutes.

   Combine mayonnaise, cheese and cayenne pepper.

   Beat egg white until stiff and fold into mayo mix.

   Spread on fish and broil until puffed and lightly browned.

   Serve immediately.
