Orange Dream Jello Salad

Great Jello salad, especiallyin the summer. Can even be used a cool, creamy dessert. Everyone loves this great salad. I sometimes add a small can of mandarin oranges as well.

SERVES 8 (change servings and units)

    Drain pineapple.

    Mix together dry jello packet, and cottage cheese.

    Add pineappple, mix well.

    Add cool, mix well. Best when chilled for at least and hour.

Unbelievable!!! I've been cutting back on sweets and was just craving something sweet, but relatively healthy. So, I happen upon this recipe. I followed the directions to a "T" except using low fat Cool Whip and added two cans of mandarin oranges. It made quite a bit, so I made it in a large mixing bowl. It was late in the evening when I finished making it and knew that I had to wait until it chilled for the best taste. I couldn't wait....so, I had two small bowls. I stayed up real late and finally it was completely chilled. I just kept eating it. When I was done, the bowl was half gone. So, I took it out of the big bowl (washed it) and put it into a small bowl. In the morning, my DH said "Boy, that didn't make very much." I just gave him a weak, guilty smile and agreed with him. THEN I took the rest in a container to work and ate the rest throughout the day. This is ADDICTIVE! I bought the ingredients to make it a couple of times. What do you think....should I share some this time with my family? LOL!!!
