Asparagus With Lemon Caper Vinaigrette

Family Fave adapted from GH Best Recipes 1998. This is great with fish, the vinaigrette complements any mild white fish, too. Also a good, quick make-ahead dish for a dinner party, it will keep in the fridge for a couple hours. Also doubles or triples easily.

SERVES 4 (change servings and units)

Ingredients

    Trim ends of asparagus and place spears in a large skillet.
  2. 2
    Cover asparagus with water and add salt and 1 Tbsp lemon juice.
  3. 3
    Bring to a boil, then reduce heat to simmer about 7 minutes until crisp-tender.

    Remove from heat and run under cold water to stop cooking.
  5. 5
    Prepare vinaigrette:.
  6. 6
    Combine remaining lemon juice, capers, mustard, sugar, and pepper. (Capers may be chopped or left whole, it's up to you. I usually chop them up a little.).

    Slowly drizzle in oil while whisking rapidly, allowing vinaigrette to thicken slightly.

    Toss asparagus with vinaigrette and serve.

    May be refrigerated and served within a couple hours, or served warm immediately.

Very good ! We liked these a lot. the taste was tangy and full of flavour. It was easy to make and easy to enjoy. I used baby fresh asparagus tips. Please see my rating system: 4 wonderful stars for a great recipe that was easy to put together on a busy weeknight. Thanks!

    We loved this. Tried it warm and cold but prefer the warm best. The lemon caper vinaigrette really adds a nice touch to one of my favorite vegetables. Thanks Gator.

    Fabulous! I tasted this both hot and cold as well, and I enjoyed it both ways. I do think it would improve the flavor of most mild fish, although one doesn't have to have fish to enjoy this. I could enjoy this by myself, and almost did as I pondered the thought of running off with all the asparagus to myself and leaving my family to order take-out. In the end, I shared, and they are happy I did. Thanks for sharing. ~Lorie
