Five-Spices Chicken Wings

From the issue of August 2006, Coup de Pouce. They are made on the BBQ. There is 2 hours time for marinade.

SERVES 35 (change servings and units)

Ingredients

    Cut the tips of chicken wings and throw them away. Cut the chicken wings in two at the joints. In a big bowl, mix remaining ingredients, except the honey. Add chicken wings and flip to coat well. Cover and let marinate 2 hours in the fridge. (You can do this step one day ahead and cover them. They will be good until the next day).

    Put the barbecue to medium heat. Put the chicken wings on a greased grill or in a grill basket. Close the cover of barbecue and cook for about 25 minutes or until chicken wings are crispy and juice runs clear when poking with a fork. (MAKE SURE TO FLIP THEM SOMETIMES).

    Baste chicken wings with honey, close cover of barbecue and keep cooking 3 minutes (flip them one time).

I scaled this down to serve 12 which brought me down to the 1 lb wings I wanted to use. Played a bit with the numbers after that (I used 2 garlic cloves for instance and a very rounded tablespoonful of honey). These were tasty, spicy, but not hot spicy. We liked them very much.

    This was my first time using five-spice powder. I could taste the cinnamon and nutmeg from on the wings. The honey really pulled all the flavors together. I did end up baking my at 350 degrees for 25 minutes on each side. I brushed them with honey, turned off the oven and put them back in the oven for 3 minutes. I made this for Zaar World Tour 4 2008 for the Asia Regional Recipe. Go Team, Tastebud Tickling Travelers

    We really enjoyed these tonight. They had a really nice touch of sweetness from the honey. The five spice flavor is so Asian and it was the perfect amount, not too overpowering but still very flavorful. We only marinated them for about an hour and that was fine!
