Sephardi Flaky Cheese Rolls

These are wonderful little rolls that are very "more-ish", very addictive. You can use any combination of cheeses that you like, we're partial to feta and kashkaval.

SERVES 10 (change servings and units)

Ingredients

    Spread evenly the crumbled feta on the first piece of dough.
  2. 2
    Cover with the second piece, then add shredded yellow cheese.
  3. 3
    Roll carefully.
  4. 4
    With a sharp knife cut the roll approximately every inch.
  5. 5
    Hold each piece between the palms of your hands and make a slight rotary movement to seal the pastry.

    Place on a non-stick pan and bake in a medium oven until golden brown, about 20 minutes.

These are really good. I made them with feta and cheddar. The feta made them a bit too salty for my taste. Next time I'll experiment with the cheese ratio.

    I came very near eating this almost all by myself, it is so simple and VERY good. I had to use feta and sharp cheddar. Paired with a nice glass of wine this is just perfect. Thank you Mirj!
