Diabetic Banana Split Pie

With a family history of diabetes, we've been making adjustments to some of our favorite recipes. My daddy, who is a diabetic really likes this pie and it doesn't run his blood sugar levels up. It is quick and easy also which gives it another reason for a "thumbs up" at my house.

Thanks so much for posting this recipe. I made this for our church's Valentine dinner, since there are so many dibetics in our congretion, including me. Everyone loved it! Even those who aren't dibetic were asking for the recipe.

I couldn't find a 4 oz package of pudding, so I assumed the recipe meant for the larger one and used that. I also threw some Kashi Honey Flax cereal in a processor with 2 tbsp butter and pressed that into the bottom of the pie plate for my crust. Used half the stated pineapples. Next time I will let my Cool Whip thaw better or chill the pie for awhile before adding it. I also scattered about 1/8 c of that same cereal on top instead of nuts (the cereal has almonds in it but crunchier and less fat, etc.)
