Coconut Almond Muffins

Nice for a brunch or even use as a nice snack. Combination of coconut, almonds and mini chocolate chips. Yummy!

SERVES 6 , 6 muffins (change servings and units)

Ingredients

Directions

    In a bowl, combine the flour, sugar, baking powder, and salt.
  2. 2
    In another bowl, whisk the egg, sour cream, butter and extract.
  3. 3
    Stir into dry ingredients just until moistened.
  4. 4
    Fold in coconut and chocolate chips.
  5. 5
    Fill greased or lined muffin cups two-thirds full.
  6. 6
    Sprinkle with almonds (and additional sugar if desired).
  7. 7
    Bake at 375 degrees for 18-20 minutes.
  8. 8
    Cool for 5 minutes before removing from pan to wire rack.

    We LOVED these wonderfully moist muffins! I doubled the amount knowing 6 muffins were not going to last long and I was right but for some reason I got 16 muffins in all.. not that I am complaining! I sprinkled demerara sugar on top and they weren't overly sweet. Thank you, HokiesLady, for sharing this wonderful recipe. Definitely will be making it again!

    This taste soooooo good!!! I had to substitute 1/2 cup of plain yogurt for the 1/2 sour cream, but it still tasted so great!!! It was so easy to make. I have a feeling this will become a family favorite
