Creamy Cauliflower Soup

This is a great cauliflower soup recipe. I originally saw it published at happycow.

SERVES 2 (change servings and units)

Ingredients

Directions

    All all ingredients to a soup pot and bring to a boil.
  2. 2
    Simmer uncovered for 10 minutes until vegetables are tender.
  3. 3
    Use an immersion blender to puree. (or transfer to a blender)
  4. 4
    Salt and pepper to taste. Garnish with cilantro or parsley.
  5. 5
    For vegetarian version, serve with dollop of sour cream.
