I don't remember where I took this recipe. I love the addition of marashino cherries :P

SERVES 12 (change servings and units)

Ingredients

    Put the eggs in a large bowl. Beat until it’s soft and frothy. Add the sugar and oil. Beat well. Incorporate the mashed bananas and the almond extract.
  2. 2
    Put all the other ingredients in another bowl. Stir until combined. Put in the eggs mixture. Stir until combined. Put in 12 greased muffins cups.
  3. 3
    Cook for 30 minutes at 350 F until a tooth-pick inserted in it comes out clean.

I renamed these Banana Split Muffins and took them out to an event. They got several compliments and questions about the ingredients. My husband has mentioned 2 or 3 times how much he liked "those muffins." I think it's a hint! I used oil and I had sliced almonds on hand, so I crushed them up a little and used them. Thanks! Reviewed for 1-2-3 Hit Wonders Tag.

    I think I just had a little taste of heaven Boomette! I don't even know where to begin to tell you how marvelous these muffins taste! They are light and airy, the bits of coconut, chocolate and cherry - oh my! They just all compliment the background flavor of banana. If they had 20 stars my son told me to give it to you for this recipe! I'll be making these very very often! Made exactly as written and tagged in 1-2-3 Hit Wonders April 08! Bon Apetit!

    These muffins were DELICIOUS!!! Used a bit less than 1/2 cup of sugar and used 1/4 cup of oil and 1/4 cup of applesauce. Had some white chocolate leftover, so used half white chocolate and half chocolate kisses. The muffins came out moist, tasty and SO GOOD!!! Merci Boomette!! Made for Tag
