Kelly's Cinnamon & Chocolate Chip Muffins

From Quick Cooking 2003 - created by Kelly Sellers. These muffins freeze very well. Making a double batch works extremely well too.

SERVES 18 , 18 muffins (change servings and units)

Ingredients

Directions

    In a large bowl, combine flour, pudding mix, cinnamon, baking powder, baking soda and salt.
  2. 2
    In another bowl, combine eggs, buttermilk, oil, honey and vanilla - then add to dry ingredients.
  3. 3
    Whisk for 1-2 minutes or until combined.
  4. 4
    Fold in chocolate chips.
  5. 5
    Fill greased or lined muffin cups 2/3rds full.
  6. 6
    Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean.

    Cool for 5 minutes before removing from pans to wire rack.

Yummy! Yummy! Yummy! What more can I say. Made 18 muffins with no changes in recipe. Although next time I might throw in some nuts. Thanks for posting.

    Can't go wrong with chocolate chips and cinnamon!! Made about 14 big muffins. They were a bit burnt on the bottom, but I think it was my oven that was too hot! Made for 123 Tag. Thanks Hokies!

    I don't know what I was thinking but I cut the recipe in half for my DBF and I. It made 9 muffins of which my DBF consumed 8 in one day and asked where the rest were! He said he didn't know exactly what it was but they were GOOD! I loved mine too!
