Mini Shrimp Cocktail Appetizers

From Kraftfoods(dot)com website. I made these for a party and I've had so many people request the recipe. Kraft calls for using finely chopped onions but I skipped that just to make it an even faster appetizer to get on the table.

Ingredients

  • 16 cracker (I have used Ritz & Cobblestone Wheat Crackers)
  • 1/3 cup whipped cream cheese spread
  • 1/3 cup seafood cocktail sauce
  • 16 large fresh shrimp, cooked (or pre-cooked frozen shrimp that has been thawed)
  • 1/3 cup finely chopped green onion (optional)
  • Directions

    1. 1
      Spread each cracker with 1 tsp of the cream cheese spread.
    2. 2
      Top evenly with the cocktail sauce and one shrimp.
    3. 3
      Sprinkle some of the finely chopped onions on top (if you desire).

    Gracious, how can something so easy be soooo good? I love these little snacks. Just making a few could be a great light lunch too.

    These little appys were so good and super easy to make. The flavors of the cream cheese and cocktail sauce combined beautifully. I would suggest making these at the last minute before serving so the crackers stay crisp. Thanks for sharing this recipe!
