Chocolate Bran Muffins
SERVES 6 -12 , 24 mini muffins
Ingredients
- 1/3 cup skim milk
- 1/4 cup sugar
- 1 egg
- 1/2 cup unsweetened applesauce
- 3/4 cup pumpkin puree
- 2 teaspoons vanilla
- 1 cup flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/3 cup baking cocoa
- 2 1/4 cups bran flakes
- 2 tablespoons mini chocolate chips
- 4 (1 g) packets sugar substitute
Directions

Blend all ingredients together just until mixed.2
Divide evenly between 24 mini muffin tins.3
Bake at 350 for 20-25 minutes.

I really enjoyed these! I used mashed banana for the pumpkin, oat flour & made them into regular sized muffins. I guess I didn't see the additional sugar substitute ingredient at the bottom, so they weren't as sweet as I liked-next time I'll add a little more Splenda! I really love how healthy these are. Thank u vry much for sharing!
