Tried this today and I just want to thank you Ellie_ it was delish!! I have recently learned to love papaya and this was awesome. I omitted the rice wine vinegar (didn't have any) and it was still amazing. Thanks. I will keep this recipe 4ever.

What a delicious recipe! and it's core! I was a bit worried that I wouldn't care for this because it's so unusual and I've never had quinoa but I was delighted with the blend of flavours. I had to make one substitution, mango in place of the papaya because I couldn't find a papaya. Thanks for posting.
