I was very excited when I came across this recipe! It looked very easy and sounded great! While I would give the taste 5 stars (it WAS great), for me it was very frustrating to make. It turned out to be quite messy, which isn't always a bad thing, but it did hurt this recipe. The powdered sugar was troublesome to mix with the liquids, it kept flying out of the bowl and took a very, very long time to do so. I also was not able to use the entire 4 and 3/4 cups of sugar, as my mixture had become terribly dry, not to mention the fact that I had to knead the sugar in by hand after only the first 2 cups! Ultimately, I only used about 4 cups of sugar. When I was finally ready to coat the mints, it turned out to be a much more difficult task than anticipated. Since there were no specific directions given for coating the mints, I tried several methods and finally gave up. I just spooned chocolate on to the top of the mints on waxed paper. As I'm sure you can imagine, the resulting presentation was terrible! It looked like my cats had made them. Is there some secret or method to using chocolate for this?! Please tell me if there is. I found 4 and 3/4 cups of sugar too much to use, I was unable to 'nicely' coat the mints with chocolate and the entire process was horribly messy and time consuming. All of that aside, the taste was great. Tasted just like a store bought mint, or even better. Just NOT worth all the time, mess and frustration for me.
