A Lighter Side of Cc's Oven-Grilled Reuben Sandwiches

This is an awesome reuben that uses a unique cole slaw rather than saurkraut. This is a wonderful taste sensation for Reuben lovers. We think you will be as amazed as we were. We tagged Oven-Grilled Reuben Sandwiches in the 'Make it Healthier' game and did just that. We revised it to an 'open-faced' sandwich and brought down the calories from 837, the fat from 50.5, and the carbs down from 52g. Thanks Cucina Casalingo for such a great perk to an old favorite.

SERVES 4 (change servings and units)

    Adjust oven rack to middle position, place baking sheet on rack, and heat oven to 450 degrees.

    Bring vinegar and apple cider mix to boil in medium sized saucepan over medium heat. Stir to dissolve cider mix; add coleslaw, cover, and cook, tossing occasionally, until coleslaw is tender, 8 to 10 minutes.

    Remove lid and simmer until liquid has evaporated, 1 to 2 minutes. Strain any excess liquid.

    Combine mayonnaise and mustard in small bowl.
  5. 5
    Spray one side of each bread slice with the non-stick cooking spray. Turn over onto a baking sheet lined with parchment paper. (so butter side is down). Spread mayonnaise mixture on each bread slice.

    On bread slices, layer 1/2 the cheese, then all of the slaw, then the corned beef, and top with remaining slices of cheese. Repeat to make three more sandwiches. Bake until toasted, about 10 minutes.

If you like Reubens this is a must to try! I can not say enough about this sandwich. Just thinking about it makes my mouth water. I made it as an open face, thus eliminating the calories etc of 1 slice of bread. Thanks for sharing your revision.
