Quick and easy. I love the texture and flavor the chicken broth gives to this sidedish. Serve with other sidedishes... chopped lettuce, tomatoes and sour cream. All will take the "heat" out of your Mexican dinner.

SERVES 6 (change servings and units)

Directions

    Place mashed beans in a bowl& add spices/oil.

    Mix in chicken broth and heat in mircrowave.

    Stir until smooth and bubbly.

    Sprinkle w/ cheese and serve on a heated platter.

    Also tasty cold and used as a dip.

It seems I always come back to some of the same chefs! I loved this, it was quick, tasty and I could control the salt and fat. I left out the olive oil ( as one reviewer suggested) to save the fat and added a minced garlic clove and a minced jalepeno. I also omitted the cheese. Sorry to mess with your recipe so much! Here's to your health!

    I wasn't too sure about making something like this in the microwave, but since I saw the good reviews I decided to give it a try and enjoyed it very much. I added a little too much broth because I was nervous about it being too dry, so next time I will put 1/2 cup rather than 3/4 cup.

    it doesn't get much easier than this! easy creamy beans, these were a great side dish with chili, and i plan to use the leftovers in burritos tomorrow

    Easy and good result. I can't wait til it cools down to see what kind of dip it will make! No reason to buy canned refried beans and I think you could even leave the oil out of these for a non fat version easily.
