    I added some chopped cucumbers too. This will make a great vegetarian lunch and/or snack for in between lunch and dinner.

    I thought it was tasty!! I used canned diced tomatoes instead of fresh and it was still good. Next time, I'm going to add a little jalepeno for an extra kick.

    This was so easy, and had a really refreshing taste. I used the juice of one lemon (probably less than 3 tbsp) and thawed frozen corn instead of canned. We served it with tortilla chips and on soft tortilla beef tacos. I'll definitely make this often. The only thing I might do differently is add one jalapeno for some spice, and maybe try some lime juice instead of lemon, but it's delicious as written.
