Easy Veggie Burrito for one (Vegan)

I made this for my sister last night, and she raved so spontaneously that I realised this was probably good enough to post here! Personally, I would use less of the bell peppers, but she loves them! You can also add some fresh corn kernels, if you have them... play around with this recipe as much as you want!

SERVES 1 , 1 burrito (change servings and units)

Ingredients

    Heat water (yes, water!) in a saucepan and saute the onions and bell peppers until the peppers are as tender as you want them.

    Add the garlic powder, tomatoes, basil, oregano and cook until tomatoes are soft.
  3. 3
    Now add the refried beans and cook until bubbling.
  4. 4
    Meanwhile, heat a skillet and heat the tortilla, about 15 seconds on each side; remove from the skillet onto serving dish.

    Spoon the refried beans mixture into the centre of the tortilla, fold the right and left sides one-third to the centre, then roll up from top to bottom and eat immediately!

    Or, roll it any way you want, and eat immediately!

    Top with salsa, if you like.

Wow! What a wonderful recipe! I used 1/2 cup vegetarian beans & since I HAVE to have spice/flavor to any mexican dish, I added taco sauce, cumin, chili powder, onion & garlic powder, cayenne & coriander. I heated the bean mix in a saucepan, then layered some lettuce & fat free cheddar cheese & sour cream on the burrito. It was fabulous & so easy. Thanks for sharing!

    Great recipe, but even after I added medium salsa and fresh garlic with the garlic powder, I found there to be a lack of flavor. Nevertheless, the recipe is very versatile and would be fun to play around with. I also used corn tortillas to save calories, so I'm sure that relinquished some flavor (hence the 5 stars). Thanks!

    I doubled this recipe, and boy, am I sure glad I did because I ate two of these for lunch!! These are SOOOO yummy!! I used fresh garlic, and dipped my burrito(s) in salsa. Thank you, Anu, for a recipe that is sure to become a staple for me!! ~Manda

    Pretty good, and very vesitile. It's good with refried black beans too. I personally like to add fresh garlic and onion for more flavor. I also double the recipe for one. One serving is only enough to fill a very average sized burrito. Come on, it's vegan, you can have two!
