BLT Macaroni Salad

My DH always raved about my mom's pasta salad until I found the inspiration for this recipe in TOH June 2002. Now he doesn't like it any other way. I have modified the original recipe over the years & now need to post it here for safe-keeping because the clipping is falling apart.

SERVES 12 (change servings and units)

Ingredients

Directions

    Boil pasta per package directions, then drain & rinse in cold water.
  2. 2
    While pasta is cooking, trim most of the fat from the bacon, chop into 1-inch pieces & then panfry til almost crisp; drain on paper towels & set aside.

    In large bowl, combine mayo, vinegar, salt, pepper, celery, onion & bacon.
  4. 4
    Gently stir in tomato, & pasta.
  5. 5
    Cover tightly & refrigerate til serving.
  6. 6
    *Note: Original recipe reserves bacon to add right before serving. I've done both but usually mix it immediately to save time.

This macaroni salad is very good. I used fusilli cause that's all I got. I used 2 roma tomatoes. Thanks Tinkerbell. Made for I recommend tag.

    Hubby wanted a macaroni salad with our hamburgers for dinner so I reduced this recipe to two servings. I loved the apple cider vinegar in the mayonnaise, great taste! I used some real bacon bits and some grape tomatoes, best thing about this recipe? I had all the ingredients on hand, quick and easy to make!

    This one comes together really quickly. I fried the bacon & boiled the pasta (I used mostaccioli as I didn't have macaroni) while making supper last night. Added the tomatoes right before serving so they didn't get mushy. Very colorful--the celery adds a nice crunch, too. I added a few shakes of sugar to the sauce, but a smidgen of curry would also bolster the flavor, too. I think this would also be good with 1/2 to 1 pound of imitation crab meat, for a hearty summer dinner. Made for PAC Spring 08
