Lasagna Cheese Soup

Hearty, Cheesy and Just Plain Good!! The crusty croutons with stringy cheese along with tomatoes and beef is "to die for". A wonderful entree for soup night! Very popular! Easy to prepare!

Ingredients

  • 1 1/2 lbs ground beef
  • 1 onion, chopped
  • 2 (14 ounce)  chicken broth
  • 2 (14 ounce)  diced tomatoes
  • 1 (15 ounce)  tomato sauce
  • teaspoons italian seasoning
  • teaspoon worcestershire sauce
  • 1/2 teaspoon garlic powder
  • teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated parmesan cheese
  • 1 1/2 cups lasagna noodle, broken
  • 1 (4 ounce)  italian seasoned croutons (optional)
  • 2 1/2 cups mozzarella cheese, shredded
  • Directions

    1. 1
      In large 5 quart saucepan, brown ground beef and onion. Drain.
    2. 2
      Stir in chicken broth, diced tomatoes, tomato sauce, italian seasoning, worcestershire sauce, garlic powder, brown sugar, salt and black pepper. Bring to a boil and turn back to simmer on low heat for 30 minutes.

      Add broken lasagna noodles and simmer until noodles are tender. Stir in parmesan cheese.

      Ladle soup into bowls and top with croutons. Sprinkle with mozarella cheese and serve immediately.

    Loved, loved, LOVED this soup! Now I have a new favorite! I used Mexican cheese blend and Mozzarella mixed for the cheese, but otherwise followed the recipe. This is one GREAT soup! Elaine

    Great Recipe! I used the croutons and cheese on top, and have to agree that this finished off the soup perfectly! Excellent flavor and texture!

    What a wonderful recipe this is! I really wasn't expecting much but wanted to give it a try to see if it was something my grandkids would eat even though I'm not a lasagna lover. I halved the recipe but used only 1/2 lb hamburger. Also used 2 cups water and 2 chicken bouillon cubes in place of the broth. It was extremely thick so I added a cup or so more water. This is SO good and I'm SO impressed! I know my grandkids will be crazy about it.

    WOW! This was fantastic! The presentation was wonderful and it was full of flavor. I didn't change a single ingredient and the seasoning was dead on. I loved how it thickened a bit… it was very hearty! I added my noodles just after bringing everything to a boil, then simmered everything together for 30 minutes. It was superb, and we will certainly have this again! Thanks so much for posting your recipe
