Poverty Meal

When I was a child, my family used to eat this at least once a week due to the fact that it is inexpensive and a little goes a long way. We also added fresh herbs or sometimes whole kernel corn. Its even better the next day and it freezes well.

Ingredients

  • large onion, chopped
  • 2 garlic clove, minced
  • tablespoon olive oil
  • lb ground beef, browned and drained
  • 2 (16 ounce) cans stewed tomatoes
  • 1 (16 ounce) can water
  • ounces elbow macaroni, raw
  • salt
  • pepper
  • parmesan cheese (optional)
  • Directions

    1. 1
      Saute onions and garlic in olive oil until translucent.
    2. 2
      Brown ground beef and drain.
    3. 3
      Add ground beef, tomatoes, water, raw macaroni, salt and pepper to the onion and garlic mixture.

      Cook for 15 to 20 minutes or until macaroni is tender.

      If desired, top with Parmesan cheese.
    6. 6
      Serve with crusty bread and a salad.

    Such a great versatile dish. I never really make the same meal twice when I do this. I always use the onion, garlic, beef and tomatoes, but vary the type of pasta, add in drained cans of beans (black, pinto, kidney) toss in some frozen corn or other veggies, season like its chili...sometimes italian.. every time its a winner!

    I made this for dinner last night, it was very good! My mom used to make something similar when we were kids, she called it "gholash", I think this recipe must be pretty close to hers, I made it exactly like yours, except I added a "pinch" of sugar to cut the acidity of the tomatoes. YUM!

    hi Kari, This recipe reminds me of some of the wonderful concoctions we put together as kids,there were 10 of us kids so we lived very frugal,the only change I made was to add a can of kidney beans,it was delicious!!! Thanks for reminding me of my childhood. Darlene Summers

    Whether you are in no money times, or not, this is a SUPER MEAL TO HAVE! My hubby was so excited to try it, and I have to admit while cooking I ate a little here and there! LOL I did use ground turkey and put in an extra clove of garlic and 1 tsp basil. It was so good. I thank you for this wonderful meal that will come in good use at our home!
