Coconut Rice

This is a nice accompaniment to Vegetable Thai Green Curry or other spicy dishes.

SERVES 2 (change servings and units)

    Wash the rice a few times. I do this by filling a bowl with rice and water and stirring it around, then drain the water and repeat. Repeat until the water is clear, this removes a lot of the surface starch on the rice and prevents it becoming too sticky.

    Put all the ingredients into a saucepan and bring to a boil. Stir the rice and turn the heat to low. At this point you must put the lid on the saucepan and allow to simmer for 15 minutes.

    After 15 minutes turn the heat off and leave on the hob for a further 10-15 minutes. This allows the rice to finish cooking and also cool a little before serving.

Made for Make it Healthier tag game. I used Low-Fat Coconut Cream (Or Milk) Substitute in this to bring the fat down from 22.4g per serving to 7.2g with Sat fat of 2.7g This was great. I added the cloves and found it gave a nice flavor without being overpowering.
