German Potato Salad

This is an oldy but a goody. Got this from my grandmother. Always reminds me of her.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    In a large skillet, fry bacon until crisp; remove and set aside.
  2. 2
    Drain all but 2 tablespoons of drippings; cook onion until tender.
  3. 3
    Stir in flour, blend well.
  4. 4
    Add vinegar and water; cook and stir until bubbly and slightly thick.
  5. 5
    Add sugar and stir until it dissolves.
  6. 6
    Crumble bacon; gently stir in bacon and potatoes.
  7. 7
    Serve warm.

    This has become one of my family's favorites. Instead of the bacon I add a pound of kielbasa (sliced and browned) to make this a main-dish meal. My dh has fond childhood memories of the canned German potato salad - finally I have a worthy substitute!

    I used this recipe for my german klasse it was very good and now I make it regularly (once every other month or so) for my family and my mother and sister love it (so do I)

    I made this at my husband's request. His mom always made GPS and he thought the ingredients looked right. He was very happy. We both enjoyed the bacon-vinegar flavor with just a little sweet taste. We tried it both warm and cold and I prefered it warm, he liked it either way. My son got in on the action and gave it a thumbs up as well. Thanks!!
