Granny's Coconut Pie

This recipe has been passed down through the generations. My great grandma always made this pie, then my grandmother took over, and now it isn't a holiday unless this pie is there. Posting here for safekeeping as I would be heartbroken if my well worn recipe page ever got lost...

Ingredients

  • 2 frozen pie crust (deep dish-thawed)
  • cup milk
  • 2 1/2 cups flaked coconut (1 7oz bag)
  • cups sugar
  • teaspoons vanilla
  • 6 egg
  • 1/2 cup butter
  • Directions

    1. 1
      Put coconut in a bowl. Pour milk over and set aside.
    2. 2
      Cream butter and sugar, add eggs one at a time till mixed well. Add vanilla.

      Stir in coconut and milk.
    4. 4
      Poke thawed crusts well with a fork. Pour batter evenly into the two crusts.

      Bake at 350 for 30 to 40 mins or till center is almost set and pie is golden brown.

      Note: If crusts starts to brown too quickly cover it with tin foil for remainder of cook time.

    This pie is absolutely delicious! Coconut pies are one of my favorites and this one is so creamy and full of coconut flavor. I will definitely be making this one again.

    Amazing pie! I say that and I even made it wrong! I halved the recipe, but forgot to reduce the milk. I used Organic Skim and even though I halved the recipe, I still added 1 cup of milk. The pie still came out perfect! I needed to cook a tad longer than the requested time, by about 10 minutes. But the pie still came out creamy and full of coconut-y flavor! I used 1 deep dish frozen pie crust which was perfect for the amount. I love coconut pie and this one is wonderful. Thank you so much, MsSally ; )
