Southern Lima Butter Beans With Ham Bits

Recipe #273842 | 1¼ hours | 5 min prep | add private note
Seasoned Cook

By: Seasoned Cook
Dec 26, 2007

These are so delicious you will DANCE AROUND THE TABLE!!! A good southern vegetable dish that goes well with chicken, pork or beef. My family always had a big garden and grew butter beans. We would sit on the back porch and shell beans to put into the freezer. We tried to pick the tinest beans because of their flavor. Now, with a busy life a purchased bag of these beans not only bring back memories, but are popular in our every day meals. Purchase the bag that states "tiny" or "baby" lima beans. They make a pretty dish when having guests. The ham and bacon drippings will provide some saltiness; therefore, use the small amount of salt and give it a taste test.

Ingredients

Directions

  1. 1
Bring water to boil and add beans, ham bits, bacon drippings, salt and black pepper.
  2. 2
Cook on a low simmer heat for 1 1/2 hours. Some water will evaporate, but let at least 2 cups remain. Check frequently to not let water completely boil out.

Ohh Yum!! These butter beans are soooo delicious! I had no bacon drippings so subed with butter and used red pepper flakes instead of regular black pepper, about a half teaspoon; also added a clove of garlic. We ate them as a meal with pull apart buns straight from the oven, a real "comfort food" meal!! I will be making them again, thanks so much for posting in the comfort food photo event!!

Boy I love these!! They turn out real soft and flavorful! Taste like my favorite country buffet or like grandma makes! I didn't know if I should thaw my beans or not so I ran hot water over the bags a little bit before putting them in the pot. (they were still pretty frozen though) Used 1/8 tsp seasoning salt instead of 1/4. I cooked them uncovered the whole time and I had plenty of water, I didn't need to add any. Thanks so much for this delicious recipe!
