A really good way to make dove.

SERVES 4 -6 , 8 clean doves (change servings and units)

Ingredients

Directions

    Cut doves along backbone, butterfly by removing the large bones of the lower back & legs.
  2. 2
    Press flat, roll in flour.
  3. 3
    Brown lightly in butter & sprinkle with herbs & parsley.
  4. 4
    Cover & cook slowly for 15 minute.
  5. 5
    Add onions, mushrooms with the liquid, & sauterne.
  6. 6
    Cover & simmer 1 hour or until tender.
  7. 7
    Add salt 5 minute before removing from heat. Serve with wild rice or hot buttered rice.
  8. 8
    NOTE: QUAIL OR SQUAB MAY ALSO BE USED.
