Parmesan Courgettes (Zucchini)

Posted for Tisme, recipe by Tana Ramsay from BBC Food. A simple & delicious side to make when zucchini is plentiful.

SERVES 2 -4 (change servings and units)

Ingredients

Directions

  1. 1
    Heat a little olive oil in a pan and add the courgettes.
  2. 2
    Cook until slightly browned then add the garlic, lemon juice and zest and stir though. Sprinkle over the parmesan and stir to coat the courgettes. Fry until the parmesan crust crisps up.
  3. 3
    Serve with some parsley sprinkled over the top and wedges of lemon if desired.

This was good. I had a problem though. I couldn't get it to crisp up. I turned out to be a gloppy mess of cheese. The taste, however, was wonderful! Thanks for the recipe!

    Nice and quick side dish. Flavors were really good together. I cut back on the cheese a little since the rest of our meal had so much fat going on. Zucchini and Parmesan is one of my favorite combos. Hopefully we will get some zucchini in the garden soon and I can do this more often! Made for my Babes for ZWT4 Italy.

    These remind me of summer! I like the parmesan on these and they make a quick and easy side dish! Made for ZWT 4 by a Jefe de la Cocina.
